That piece of meat over sabzi is called Mahicha..it comes both with and without bone. Its actually the softest part of a sheep's meat. I cant give more explanation..I'm already hungry..lol

This is how it was explained in a website: Mahicha Palau Bone in lamb shanks, slow cooked in a caramelized onion broth and lightly tomato sauce, served with brown rice

some afghans don't clean it well.. before cooking
